Pairing
They Mostly Come Out at Night by Benedict Patrick
Inspiration
The Pale Lady is perhaps the most fascinating and enigmatic character within this debut, and creative as I can be, sometimes there’s an existing cocktail that fits the bill so perfectly that you have to go with it. In this case, it’s a classic White Lady.
Now, if you’re squeamish about the inclusion of egg white, I can assure you that the cocktail will not taste of egg. The effect of the egg white is a nice froth on the surface of the drink and a really pleasant, silky texture – if you’re concerned about raw egg (understandable), I recommend using pasteurized egg white from a carton.
Recipe
You will need:
- Cocktail Shaker
- Ice
- Martini/Coupe Glass
- 2 oz Gin
- 1 oz Triple Sec/Cointreau
- 0.5 oz Lemon Juice
- 1 Egg White
Fill cocktail shaker with ice. Add all ingredients. Shake very vigorously for 10 seconds, and strain into glass. Enjoy!
